DIGASE™ is an extremely effective and complete enzyme supplement formula. This excellent formula contains a full spectrum of digestive enzymes: proteases (optimized for pHs of 3.0, 4.5, and 6.0), peptidase, lipase, and carbohydrases, including amylase, glucoamylase, invertase (sucrase), maltase, alpha-galactosidase, lactase, phytase, cellulase, and hemicellulase. CereCalase™ is included to break down phytic acid, a substance that can prevent proper absorbtion of minerals in the diet.

NUTRITIONAL CONSIDERATIONS AND APPLICATIONS

Food enzymes play an essential role in digestion by predigesting food in the upper stomach before any hydrochloric acid is secreted. Supplementation of food enzymes is recommended in today’s society largely due to the extreme prevalence of cooked, overcooked, and processed foods.

Modern methods of preparation (e.g., cooking) often leave foods devoid of digestive enzyme activity because foods enzymes are essentially destroyed at temperatures of approximately 118° Farenheit or above. Foods are commonly heated during preparation to temperatures greater than 150°. This fact means that many foods lack enzymes, and that typical, modern Western diets (e.g., the Standard American Diet or SAD) characteristically contain relatively lower levels of enzymes than diets both from earlier periods in Western history (as recently as the mid-20th century) and diets from non-Western cultures wherever modern/industrial methods of processing and/or cooking have either not been adopted, or not fully embraced.

Destruction of food enzymes (via cooking and processing) therefore places greater digestive burdens on the body, which must produce greater amounts of enzymes to compensate for the loss of enzymes in foods we eat. The digestive system consequently can become overstressed and vital nutrients may not be released from foods for assimilation.
